Lentil Soup 🥣 one of the first things I ever learned to make as a vegan and I still love it to this day!
It’s easy, quick and nutritious with lots of veggies, fiber and plant protein from the lentils. The only twist I like to add is a little gochujang along with the tomato paste.
Save this one for days where you don’t know what to eat or don’t have much in the fridge to work with!
