Brussels sprouts & potato side dish
Ingredients:
– 600g potatoes
– 750g brussel sprouts
– 1 large onion
– 2 cloves of garlic
– 1 tsp salt
– 1/2 tsp ground cumin
– 1/2 tsp ground black pepper
– 4 tbsps olive oil
– 1 apple (optional)
Method:
– chop potatoes, onion and garlic (leave sprouts whole, for this recipe I used frozen sprouts)
– To a frying pan, add the oil and turn heat to medium
– Add cubed potatoes
– Cover with a lid and leave to cook for a few minutes
– Add chopped onions and stir in then cover with lid. Cook for a few minutes
– Add garlic, ground cumin, ground black pepper and salt then stir in and cover with lid. Cook for a few minutes
– Check potatoes to see how cooked they are, once they get to the stage where they are soft but still have bite, them it’s time to…
– Add brussels sprouts, stir in gently, cover with lid and cook for several minutes
– Peel and chop apple
– Add chopped apple and gently stir in. Cover with lid and cook until the sprouts are tender.
