Vegan potato salad has not made an appearance in my kitchen since sometime last year. It was okay, but that was before I had vegan mayonnaise. And this vegan mayo is by one of my favorite companies, Earth Balance. So I am all ready to give vegan potato salad a second shot at the real thing.

Vegan Potato Salad Recipe – Creamy Vegan Potato Salad
What do you need to make creamy vegan potato salad :
8 medium sized russet potatoes, boiled until fork tender and peeled
1 1/2 cup vegan Mayonnaise, earth balance
4 tablespoons yellow mustard
1/2 medium onion, chopped
1/2 cup relish
1 teaspoon salt
1/2 teaspoon pepper
How to make creamy vegan potato salad:
Chop potatoes into 1/4-1/2 inch cubes.
Fold potatoes in with vegan mayonnaise, mustard, onion, relish, salt, and pepper (and any other add-ins).
Simple enough, enjoy your vegan potato salad.
