    🥣 Ingredients :
    3 tomatoes
    13g | 2tbsp chopped spring onion
    1tsp chopped ginger
    3tbsp chopped cilantro
    90g | 1cup chickpea flour (gram flour)
    1tbsp nutritional yeast
    1/4tsp red chilli flakes
    1/2tsp ground cumin
    salt to taste
    water
    dairy free cheese (optional)
    olive oil for frying

    🧑‍🍳Cooking tip:
    ❗Feel free to add your favourite herbs, spices and vegetables to the recipe to get your favourite flavour. Chopped spinach, grated carrots or zucchini are all would be a perfect addition.

    🥣Method:
    Finely chop 2 tomatoes.
    Transfer to a mixing bowl.
    Chop 13g| 2tbsp spring onion.
    Grate 1tsp ginger.
    Finely chop cilantro.
    Add 90g | 1cup chickpea flour to another bowl.
    1tbsp nutritional yeast.
    1/4tsp red chilli flakes.
    1/2tsp ground cumin and salt to taste.
    Add water and mix everything together. The batter has to be of a medium consistency and with no lumps.
    Pour the batter into tomatoes mixture.
    Mix and stir well.
    Slice 1 tomato.
    Place tomato slices into a slightly greased frying pan.
    Pour the batter over and spread it even.
    Fry on a medium heat covered with a lid until the bottom is golden brown and crispy.
    Turn the omelette over and fry the other side.
    Sprinkle with dairy free cheese.
    Cook until golden brown.
    Serve eggless tomato omelette with humus, tomato ketchup or mint chutney.
